Along a quiet Paris side street, I stepped into a pastry shop advertising gluten free baked goods. The case was full of amazing French pastries, beautiful, (and probably not gluten free.) I sighed as I eyed the case looking for the allergy-friendly section. Nothing was labeled. “Excusez-moi, Monsieur, which pastries are gluten free?” I asked the man behind the counter. He smiled at me, “Mademoiselle, everything. Everything is gluten free.”
